Low Carb Mustard Maple Cabbage

Ingredients
Olive Oil
2 tablespoon
Apple Cider Vinegar
1 tablespoon
Dijon Mustard
1 tablespoon
Maple Flavored Syrup by Lakanto
1 tablespoon
Vegetable Broth, Bouillon Or Consomme
1 cup
Red Cabbage
½ medium - head - approx 5" diameter
Red Onion
½ medium - 2 1/2" diameter
Thyme, Fresh
½ tablespoon

Step 1
Thinly slice the cabbage and the onion. Heat the olive oil in a large saucepan or casserole dish over a low/medium heat. Add the cabbage and onion and cook for 3-4 minutes to soften a little.Step 2
Add the thyme leaves, mustard, syrup and vinegar. Stir well to combine until the cabbage is well coated and cook for a minute more.Step 3
Add the stock and bring to a gentle boil. Reduce to a simmer and cover the pot, cooking for 15 minutes.Step 4
Uncover the pot and continue to simmer for a further 15 minutes, or until all the liquid has evaporated, stirring often.

I had to change some things. I added garlic and green chili. I didn’t have syrup but my husband is a beekeeper so I replaced it with honey. 👍
