Keto Christmas Egg Bake

Keto Christmas Frittata is made festive with ingredients that shine bright with red and green colors. Clarified butter is used to saute savory mushrooms, onions, spicy red poblano pepper, green spinach, and ham. Large eggs are cracked on top of this mixture and sprinkled with a generous amount of salt and pepper. Finally, the dish is dotted with salty feta cheese and baked until the cheese is hot and the eggs are perfectly sunny side up. This recipe makes for the perfect Christmas brunch!

What if I do not like sunnyside up eggs?

If sunnyside up eggs are not for you, pop the egg yolks and flip the eggs with the ham and spinach mixture attached to it. Cook it on the second side until well done.

How do I add more fat to this meal?

One way to add more fat to this meal is to top the eggs with extra feta cheese. It is so delicious. Alternatively, you can top the eggs with a melty cheese like Chihuahua (my favorite) or mozzarella.

What if I can’t find red poblanos?

You can use red bell pepper instead for a pop of color.

  • Step 1

    Preheat an oven to 400 F. Heat a medium-sized heatproof nonstick skillet over medium-high heat until hot. Add the ghee and cook until melted. Tilt the pan to distribute the oil evenly. Add diced onions and diced mushrooms to the pan. Cook for 2-3 minutes or until browned on the edges and softened. Add ¼ tsp kosher salt.

    Add the diced red poblano and ham. Cook for another 1-2 minutes.

    Add the spinach on top and then immediately crack the eggs on top.

    Crack the eggs evenly spaced around the skillet. Sprinkle them with ¼ tsp kosher salt. Add black pepper on top if you would like.

    Sprinkle the top of the eggs with the feta cheese. Place the skillet into the oven and cook until the egg whites are opaque and the centers are to your liking.

    The cook time is about 10 minutes for medium-firm egg yolks. Add more or less time for a runny or firmer egg. Cut into four portions.

    This is labeled as pork free but lists ham as an ingredient. Is there a substitute?

      You could use any meat you like. I have made many variations of this recipe :) I’ve made it with turkey sausage - you just cook it first then do the veggies and just add it to the pan before the spinach. I don’t know what the macro changes would be but you can figure that out fairly easily I would think.
