Keto Gouda Grits
Grits are typically paired with breakfast, but you can enjoy this hot side with any meal. You may find this recipe similar to cauliflower mashed potatoes, since both share the base of cauliflower. The key in this recipe is to create the perfect texture of grits: a little creamy and a little “gritty.” A sprinkling of shredded gouda cheese is what makes this side absolutely delectable!

Ingredients
Cauliflower, Cooked From Fresh
10-½ ounce
Unsalted Butter
½ tablespoon
Heavy Cream
¼ cup
Gouda Cheese
¼ cup, shredded
Salt
1 teaspoon
Black Pepper
½ teaspoon
Garlic
1 clove
Onion Powder
¼ teaspoon
Green Onions
½ tablespoon, chopped
Recipe Steps
steps 3

Step 1
If you need to cook your cauliflower, simply boil in water until tender. If you are using frozen cauliflower, you can microwave or steam it until tender. Either way, it’s important to use hot, cooked cauliflower for this recipe to work.Step 2
Combine the cauliflower with all the other ingredients, except for green onion, in a food processor. Pulse the mixture until the dairy items are melted and incorporated into the “grits”. The key is to not process too much so some cauliflower is creamy and some is still textured like grits. If you prefer your grits to be a little looser, you may thin out the mixture with warm water 1 tablespoon at a time.Step 3
Serve hot with freshly chopped green onions!

Scrumptious!! I miss grits so much until I found this recipe! I will have them for breakfast lunch and dinner as they also remind me of mashed potatoes. Yum!! Thank you!

Loved it! I didn’t have any more whipping cream or green onions but despite that it tasted phenomenal! Thank you! 💗

Love it...exchanged the whipping cream with sour cream....and instead of the gouda cheese used sharp chedar cheese..the taste was out of this world!

What if we don’t have a food processor

If it were me, I’d buy riced cauliflower (or grate it myself) cook it in a pan with a little water until tender, blend half the cauli with the other ingredients, then add the rest of the cauli and pulse in the blender a few times. That should give you approximately the same result. Edit: I didn’t have a food processor till last year…

Will this work with frozen cauliflower rice that i but at Costco?

You should start with whole cauliflower florets. Pre-cut cauliflower rice will not have the same integrity, and you may be left with soggy grits. Hope this helps!
