Step 1
Preheat your oven to 400F/200C. Season the chicken with salt and pepper on both sides and dredge them with coconut flour. Cut the onion into wedges, slice the garlic, chop the parsley, and pit the olives.Step 2
Heat 2 tbsp of olive oil over medium-high heat in a cast-iron skillet or Dutch oven. Place the chicken skin-side down and cook undisturbed for 4-5 minutes until golden brown. Flip and cook for another 2-3 minutes.Step 3
Transfer the chicken to a plate and add 1 tbsp olive oil to the skillet. Add the onions and garlic and sauté for 1 minute. Stir in the thyme and 2 tbsp of parsley.Step 4
Add in the wine and chicken broth. Scrape the brown bits from the bottom of the skillet. Add the cherry tomatoes and olives.Step 5
Place the chicken in the sauce, skin side up. Cover the skillet with aluminum foil or a lid. Bake for 45-50 minutes.Step 6
Carefully take the skillet out of the oven and remove the foil/lid. Let it cool for 10 minutes. Garnish with the remaining parsley and lemon wedges and serve.

Easy to make and rich in flavor. I know it's weird but I don't like olives so I used avocado oil in lieu of olive oil and omitted the olives but added baby Bella mushrooms. I know that's a bit of taking the Provencal out of the dish but it was quite delicious. I knocked the recipe down one star because I find it frustrating when the ingredient list does not match the pictures in the cooking process. The written recipe called for four chicken thighs but the photographs show six. Likewise the ingredients call for onion and the photographs show red onion. I used six chicken thighs because I had them on hand and I did use red onion even though I know that increases the carbs a bit. With regard to the other ingredients, I kept the same measurements and there was ample flavor and sauce for six thighs. I served mine with Keto Skillet Bread ( recipe from this app) which I reheated in an air fryer to get a crispy biscuit-like texture all around. It was a very satisfying and flavorful meal.
