Cookies for breakfast? Yes please! Easy low carb paleo recipes can be hard to come by, but this one is just the ticket. Each cookie is high in a healthy variety of fats, which can be a great start to your day. By eating a meal high in healthy fats at the beginning of the day, you can train your body to fuel itself with slow-burning calories instead of fast-burning carbohydrates. Net carbohydrates particularly are the carbs you want to avoid because these are the carbs without fiber (a.k.a. sugar). The only sweetener in this cookie is all-natural honey. The remaining ingredients are all low-carb and nutritious!

Other ingredients to add

Think of this paleo cookie as a base recipe. You can add other ingredients to alter the flavor to your liking. If you don’t like coconut, omit it and replace the crunchy texture with chopped almonds or pecans. Is it the holiday season? Replace the almond butter with pumpkin puree for a seasonal flavor.     Turn on an oven to preheat to 350 F (180 C) and line a baking sheet with parchment paper. In a large mixing bowl, whisk together egg, almond butter, room temperature coconut oil, honey, and vanilla extract. Set this aside briefly.

    Mix together almond flour, salt, cinnamon, unsweetened coconut flakes, and hemp hearts. Then, fold them into your wet ingredients in the larger bowl with a rubber spatula. Portion the cookie batter into 3-tablespoon portions on your prepared baking sheet.

    Gently flatten the cookie batter into a cookie shape if it doesn’t settle naturally. Bake the cookies for 15 minutes or longer. Look for golden edges around the cookie to check for doneness. Cool before eating.

      I made these according to the recipe, however, next time I am going to add more cinnamon. Otherwise I recommend this recipe.
