Olive Oil

Cauliflower Florets by Flavorite
1 cup
Garlic
1 clove
Sour Cream
1 tablespoon
Lemon Peel Or Zest Raw
1 tsp
Lemon Juice
1 teaspoon
Salt, Sea Salt
1 teaspoon
Cheddar Cheese
⅔ cup, grated
Mozzarella Cheese
½ cup, grated
Parmesan Cheese
⅓ cup, grated
Black Pepper
⅛ teaspoon

Step 1
Add the cauliflower florets to a small pan of boiling water and simmer for 4-5 minutes until fork tender. Drain completely and set aside to cool and steam dry.Step 2
Add the cauliflower to a food processor along with the garlic, lemon juice and zest, all the cheeses, sour cream, salt and pepper. Blend to combine.Step 3
With the food processor motor still running, slowly drizzle in the olive oil a little at a time until you have a smooth and creamy consistency.Step 4
Optionally scatter with fresh herbs to serve.

This is really good even using broccoli instead of cauliflower. Another time I substituted cream cheese for the sour cream and it's still great fast and easy.
