  • Step 1

    Add the cauliflower florets to a small pan of boiling water and simmer for 4-5 minutes until fork tender. Drain completely and set aside to cool and steam dry.

    Add the cauliflower to a food processor along with the garlic, lemon juice and zest, all the cheeses, sour cream, salt and pepper. Blend to combine.

    With the food processor motor still running, slowly drizzle in the olive oil a little at a time until you have a smooth and creamy consistency.

    Optionally scatter with fresh herbs to serve.

    This is really good even using broccoli instead of cauliflower. Another time I substituted cream cheese for the sour cream and it's still great fast and easy.
