Best Keto Vanilla Chia Pudding
Keto chia vanilla pudding is as simple as it gets for dessert – or even breakfast! Instead of a sugary, gelatinous blob, this chia seed pudding is a far healthier option to enjoy. This makes a great base Keto dessert recipe for those who don’t see a flavor of chia pudding they’d like on Carb Manager. Chia pudding makes for one of the best Keto dessert recipes as it is so versatile, and you can add any additional flavors or toppings at your own discretion! This easy Keto dessert recipe can also be enjoyed by those following vegan and Paleo diets.
Is chia pudding healthy?
Chia pudding can be an excellent addition to your low-carb diet when consumed in moderation. Packed with fiber and antioxidants, chia seeds are protein-rich and loaded with heart-healthy omega-3 fatty acids. This means you can enjoy a sweet Keto dessert treat entirely guilt-free while also reaping the benefits for your health. What’s not to love?!
How to flavor chia pudding?
This easy Keto chia pudding recipe provides you with a classic base to which you can experiment with flavors and toppings. You can add low carb sweeteners and syrups, Keto carb fruit jam, unsweetened cocoa powder, pumpkin spice mix…the possibilities and flavor combinations are limitless! Simply stir your preferred additions into the chia and milk mixture before setting or layer over the set pudding as a topping. Be sure to factor these additions into your macros.
Can you use other types of milk?
Yes! Feel free to use other nuts milk for the pudding base. For a richer Keto pudding, use coconut milk. However, because this milk tends to be thicker, it will set in the fridge faster than nut milk. If using coconut milk, please use the canned variety.

Ingredients
Almond Milk
¾ cup
Vanilla Extract Imitation No Alcohol
½ tsp
Chia Seeds
2 tablespoon, whole pieces
Recipe Steps
steps 3
12 h 5 min
Step 1
Add the chia seeds, almond milk and vanilla extract to a bowl. Whisk everything together until well combined. Cover the bowl with plastic wrap and transfer to the fridge. The chia pudding needs to chill in order to allow the seeds to expand and absorb the liquid. This can take a minimum of two hours, but for best results and a thicker pudding, leave overnight.Step 2
Divide the chia pudding between individual serving bowls or glasses. Optionally top with your favorite Keto toppings such as fresh berries or toasted coconut flakes. Be sure to adjust your macros to allow for any toppings added.Step 3
Enjoy your Keto chia pudding as a dessert or even breakfast option. This is also a great option for batch prepping in advance, providing you with ready-made snacks or desserts throughout the week. Perfect served in individual dessert ramekins or mini mason jars for breakfast on the go.

Really wanted to try this, but I attempted to make it twice and both times it was unsuccessful. The mixture just stayed as-is and the seeds never expanded.

You must set timer and go in and shake it at about 20-30 minutes or they don’t disburse

Much better if you leave in fridge overnight and add 1 cup of Oikos Triple Zero Vanilla Greek yogurt to it.
Barbara Engle-Szmytke 4 months ago
Plan to follow the tip as well and add the vanilla Greek yogurt, Thanks 😊

Different texture but a good way to use up almond milk and have a little sweet treat.

This recipe is incomplete. You published a variation on this one that says to put it in theMICROWAVE. Why don’t we cook THIS ONE?!!! I’m deleting this one from my favorites. I just made this a few minutes ago and now I’m concerned that I wasted the ingredients. Chia seeds aren’t cheap and neither are almond milk or Swerve! Please!!!… PROOFREAD YOUR RECIPES BEFORE PUBLISHING THEM TO CARB MANAGER. Not everyone can afford to waste these ingredients on a poorly written recipe like this one!

I believe I have read heating chia and/or flax seeds reduces their nutritional benefits —
UpbeatRadish302504 4 months ago
You don’t need to microwave chia seeds. Just stir them in and refrigerate. They absorb the liquid on their own.
SuperKale264110 4 months ago
Where did you see that you don't microwave it. Maybe you need to read it again.

I have never cooked chia seed pudding ; just some time in the fridge is fine :)

FYI: Theconsciousplantkitchen.com has a recipe for warm chia pudding. It also discusses reduced nutritional value from chia seeds when heated to certain temperatures.

you don't need to microwave this recipe. I made it alot and didn't microwave it and it thickened just fine, you might need to stir it very few hours.

It was gross! I mixed it well. Need to definitely add more vanilla and possibly maybe even heavy cream

Is this recipe as it’s written for 1 serving or 3 is it for thee servings?
Barbara Engle-Szmytke 4 months ago
Thank You, You’re right Nancy, I should have read the recipe thoroughly, my error! Since then I have made this recipe again & Topped a serving with fresh diced strawberries, I have seen where one writer commented that she added vanilla yogurt, that will be my next variation with fresh raspberries. Keto On 😊

It says the whole recipe is 3 servings.

They miss a critical step here. You have to stir the pudding two to three hours of making it and put it back in the fridge overnight. Otherwise, you end up with nasty clumps. The chia cannot absorb the liquid if you don't stir it up.

I add 4 tbl chia to 2 cups (any kind of low carb liquid) I use unsweetened almond milk add some sweetener …. Put it in a container And place in refrigerator overnight … perfect !

Well worth the calories which end up being low once they disperse in the pudding.

Never trust the nutritional info on this site nor the cooking instructions. Do your own research on cooking technique and calculate the calories for each ingredient. I just ordered the cookbook and I hope it isn't just a compilation of what's on this website. Otherwise, it's going back.

1 tablespoon of Chia seeds are 50 calories. So the 2 tablespoons of Chia seeds are 100 cal in this recipe
