Budget-Friendly Keto Tuna Cauliflower Casserole

6 ratings

Indulging in a delicious and satisfying Keto diet doesn't have to break the bank, especially when you have low-budget Keto recipes like this tuna casserole in your repertoire. With its wallet-friendly ingredients, this casserole is a perfect choice for those following Keto on a budget. Featuring cauliflower, onion, garlic, herbs, heavy cream, tuna, mozzarella cheese, and parsley, this flavorful casserole offers a tasty and nourishing meal without compromising on taste or your financial goals.

How to store this Keto tuna casserole?

First, allow the casserole to cool down completely before storing it. Then, transfer it to an airtight container that is both microwave and freezer-safe. Alternatively, wrap the baking dish with aluminum foil or plastic wrap and store it as is. Store the casserole in the refrigerator for up to 3 days. For longer storage, keep in the freezer for up to 1 month. When ready to consume, thaw the frozen casserole in the refrigerator overnight and reheat in the microwave or oven until heated through.

How to customize this budget-friendly Keto casserole?

To customize this recipe, feel free to experiment with different low-carb vegetables like broccoli and zucchini. You can also incorporate additional seasonings like paprika or cayenne pepper. For a creamier casserole, increase the amount of heavy cream or add a dollop of cream cheese or sour cream to the mixture. Additionally, you can include other types of seafood like shrimp or crab meat along with the tuna to create a seafood casserole. Finally, if your budget allows, add grated parmesan or cheddar cheese before baking for a boost of flavor and texture.

Can you eat casseroles on Keto?

With a few modifications, casseroles can be consumed on a Keto diet. Traditional casseroles frequently contain high-carb components like pasta or breadcrumbs, but you can easily substitute them to fit a Keto diet. Instead of high-carb ingredients, use low-carb alternatives like cauliflower rice or zucchini noodles. An ideal Keto casserole would include high-fat dairy products (such as heavy cream and cheese), lean or fatty meats, and a variety of low-carb veggies.

Sauté for about 10 minutes until the vegetables are crisp but slightly tender.
