Low Carb Chicken and Dumplings
If you’re interested in learning what some classic Keto American recipes - start with our Keto chicken and dumplings! Chicken and dumplings is a large skillet-style dish of chicken breast, brown sauce, and vegetables, usually served family-style. This adaption is our Keto-friendly version, with a couple of small changes made from the classic recipe. Classic chicken and dumplings may have a variety of different vegetables in it, but Low Carb green beans are used here. The dumplings are made with all Keto-friendly substitutions. They still are a yummy addition to the stewed chicken and soak up any extra sauce you might have in your dish.
Are green beans Keto or Low Carb?
Green beans are some of the more Keto-friendly vegetables out there. However, they still have a small number of carbs. A few ounces of green beans have about 7 grams of carbs. If you’re on a Low Carb diet, green beans are an excellent choice for a side dish. In moderation, you can make them work on your Keto diet as well.
What are the dumplings made with?
The dumplings in this Keto chicken recipe are made mostly with almond flour. Just almond milk and melted butter are added to form the dough for the dumplings. The dough just needs to chill in your refrigerator for a few minutes to absorb moisture and firm up a little. The dumplings have enough integrity to plop on top of your pan of chicken and green beans and cook until tender.
What is tapioca flour?
Tapioca flour may also be called tapioca starch. It comes from a cassava root and is naturally gluten-free. Since it is starch, it still has carbohydrates. On the Keto diet, tapioca flour can be used in moderation to thicken sauces, soups, and stews. It can be used in baking as well.

Step 1
Whisk together almond flour, baking powder, and salt in a mixing bowl to break up any lumps. Use a spoon or spatula to stir almond milk into the bowl. Melt the butter separately in a microwave or on your stovetop, then add it to the other ingredients in the bowl. Stir the ingredients together to make the dough for your dumplings. For now, store the mixture aside in your refrigerator uncovered.Step 2
Prepare boneless, skinless chicken breast by rubbing the olive oil into the flesh. Season the chicken with salt and pepper, then begin heating a large saute pan on the stove over high heat. Cook the chicken on both sides until it turns dark golden brown. If the chicken breasts are thick, use a lid on your pan to help the chicken cook all the way through without burning.Step 3
Remove the chicken from the pan and let it rest on a cutting board. Return the pan to your stove over low heat, and melt butter in the pan to deglaze it. Once the butter is melted and bubbling, whisk tapioca flour into the pan. Once the butter thickens, add frozen chopped green beans to the pan. Cover the pan and cook the green beans until they become tender.Step 4
Stir all the remaining ingredients into the saute pan. Bring the heat to medium on the stove so the ingredients come to a simmer. While the pan is heating, slice or chop the chicken breast into small, bite-sized pieces. Add all the chicken to the saute pan and stir. Remove the bowl of dumpling dough from the refrigerator. Scoop the dough into 2-tablespoon portions and arrange them on top of the ingredients in the saute pan.Step 5
Once all the dumplings are scooped, cover the pan again with a lid. Reduce the stove heat to the lowest setting while maintaining a simmer. Simmer the ingredients until the dumplings cook through - about 7-10 minutes. Once done cooking, you can scoop the chicken and dumplings into bowls or dishes for serving.
