  • Step 1

    Preheat an oven to 375 degrees. In a small glass baking dish, arrange the grape tomatoes. Drizzle the olive oil and sprinkle the salt and pepper over the tomatoes. Crush whole garlic cloves and wedge them in the dish as well.

    Bake the dish for 50 minutes, uncovered. The tomatoes will be a mix of bursted and unbursted with a strong garlic smell.

    Combine the roasted tomatoes and garlic in a food processor with the remaining ingredients. The original recipe here makes about 1 cup tomato sauce.

      I used this recipe as a basic template but in larger quantities on a large baking sheet using garden tomatoes. It’s delicious!!!! I made 2 gallons to freeze in 1-2 cup quantities for use later. I also freeze it in an ice cube tray to get single serving size pizza sauce.

          Can you use other tomato varieties? I have a large garden this year and plan on making tomato sauce and canning it in my pressure canner. I didn’t plant grape tomatoes.

            Yes, most varieties of red tomatoes share the same macros. You can substitute by exact weight.

          A little confused about how much garlic to use. The list of ingredients says 1 clove. The photos and instructions suggest more than one.
