Step 1
Preheat your oven to 375 F/190 C and lightly grease a casserole dish. Slice the squash into ¼ inch (1/2 cm) slices and transfer them to a bowl. Add 1 tbsp of olive oil and toss.Step 2
Mince the garlic and add it to the bowl. Season with salt and pepper. Toss to season evenly.Step 3
Add the remaining oil to a skillet and place it over medium heat. Add the squash and fry for 10 minutes until softened and released a lot of its moisture. Take it off the heat, drain excess liquid, and transfer the cooked squash to the casserole.Step 4
To a saucepan, add the heavy cream and 1 ½ cups of cheese. Place over medium heat and cook until the cheese is melted and smooth, whisking constantly. Take off the heat and season with salt and pepper to taste.Step 5
Pour the sauce over the squash and sprinkle the remaining cheese on top. Bake for 20 minutes or until the casserole bubbles. Turn on the oven’s broiler and bake for another 2-3 minutes until the surface is golden and crispy.Step 6
Let it cool for 10 minutes before serving. Garnish with a crack of black pepper. Enjoy as a side to your preferred dish!

This was great! I only had 1 squash so I made half a batch. I topped it with taco meat and lettuce while the family had taco's.
