Topped off with a sprinkling of cheddar cheese, this breakfast combo can’t be beat. This recipe will never get boring either because you can switch out your ingredients to your liking, such as different cheeses or breakfast meats.

  • Step 1

    Preheat an oven to 400 degrees. Shred a medium zucchini and use your hands to squeeze the excess liquid into a sink. Place your shredded zucchini in a small mixing bowl.

    Mix the parmesan and first egg into the zucchini. Line a 9x13 sheet tray with parchment paper, and spread the zucchini mixture into a thin 8-inch circle. Press the edges of the circle towards the center slightly to create a “crust”. Keeping the crust thin is important for baking, so you can make the circle bigger if you need to. Bake the zucchini crust for 20 min.

    While the crust is baking, cook 2 pieces of bacon to a crisp or just below crispy. Cut the bacon into 4 pieces.

    After baking, reduce your oven heat to 350 degrees. Crack 4 eggs onto the zucchini crust and arrange the 4 pieces of bacon over the eggs. Sprinkle the sat, pepper, and cheddar cheese over the top of the pizza.

    Bake in the oven for an additional 10 minutes for over easy eggs. You can go 5-7 minutes longer for harder eggs. Allow your finished pizza to cool for a few minutes, then slice into 4 pieces. Top with freshly chopped green onion.

    So Yummy! TIP: REALLY SQUEEZE all water out of zucchini AND be sure to flip half way as everyone said. I did this, AND added 7 mins cooking time and the zucchini shell came out perfect! To avoid the egg running off (as other have stated), simply section your zucchini shell into 4 pieces, and cook and egg over easy for each piece and then finish baking together in air fryer for a quick 3 min 400 degree blast! Well done!

          Tried this yesterday & used the suggestion to turn the crust halfway through cooking time. Turned out good but miss the crunch. Being single I just made the recipe & kept half the crust for today. Today I heated the remaining crust in the oven but fried the bacon & eggs in fry pan & melted the cheese over the eggs & just placed the eggs on top of hot crust. It turned out great. Next time I cook all in the oven I’m going to cook eggs in sprayed biscuit rings to see if it helps keep eggs from running off the crust.

              My husband and I loved it. I did some variations. Added some white mushrooms that I sauté with the bacon. Sprayed the bottom of the oven dish and that way everything stayed in place.

                  Made this to break the fast as our first ever meal on Keto and boy, did it hit the spot! A lot of poor reviews are due to the crust running. You need to remove as much moisture as possible. I took handful and squeezed over the sink until drops stopped falling from my hand(s). If you ever grew mushrooms, this would be considered “field capacity”. No issues with running. I did notice the egg will run off however. So solve this, take a spoon and make an indentation roughly the size of the egg. Drain 1/2 of the egg whites and place the yoke in your the “pocket” you made with the spoon. I added Chile powder and garlic powder to my pizza and it was outstanding. Thank you for the recipe!

                    I just made this and wow! Hit the spot! I topped with a scrambled egg and cubed ham 😋 and a sprinkle of everything but the bagel seasoning! Will flip the crust halfway next time! This will become a breakkie staple for sure 🙇🏻‍♀️

                          MY SPIN! Make your crust in the 9 x 11 pan and make sure you spray the pan first! Scramble three eggs, add diced tomatoes, spinach, and crumbled sausage. Top with your favorite cheese! Bake for another 15 to 20 minutes on 350. Now you have four extra slices or four squares if you will, for breakfast for the next three days! I topped it with homemade salsa and ranch dressing! 😋 I wish I could’ve submitted a picture it was a beautiful thing!

                              It was really good but I had some problems. One was how do you get the egg to stay on the crust?? Mine just slid right off. Also the parchment paper just stuck to the bottom of the crust, any suggestions? I’m pretty sure I ate some of the parchment paper. Hope it doesn’t count against my macros lol.

                                You can also lightly spray the parchment paper with a spritz of olive oil or avacado oil - for that matter, coconut oil too

                                I too have the same problem and would like to know how other people on here solved it. When I don’t use parchment paper and just oil the pan then it’s hard to spread.
