Roasting is a fast and easy way to get more veggies into your diet. It’s simple to arrange vegetables on a baking sheet and pop them in the oven. This lemon, garlic and olive oil combo is a great go to for any vegetables, but lends itself especially to broccolini and asparagus. If you can’t find broccolini, feel free to substitute broccoli florets.

  • Asparagus

  • Step 1

    Preheat your oven for 375 degrees Fahrenheit. Cut the ends off of the broccolini and asparagus. Cut about ½” off of the broccolini and 1” from the woody ends of the asparagus.

    Grate the clove of garlic and zest a lemon into a small bowl. Add the salt and olive oil and mix together well.

    On a large baking sheet (cover with parchment if you’d like), arrange the broccolini and asparagus so they’re touching as little as possible. Drizzle the olive oil mixture on and massage the oil into the vegetables, especially into the broccolini florets.

    Roast the asparagus for about 12-15 minutes (depending on their diameter) and the broccolini for 15-20 minutes. Enjoy!

    Brocolini is one of my favorites, the asparagus is no longer in season here in New Jersey so I will be using this recipe for just the broccolini

        I only used broccolini in an air fryer oven. I did not mix the oil and seasonings. I sprayed the broccolini with olive oil and heavily doused it with garlic powder and a little salt. Then I overcooked it because I forgot "air fryer". But it was crunchy and tangy. I'd make that mistake again!

          very good! I used asparagus per recipe but added brussel sprouts (sliced in halves) instead of broccolini. My only reservation was the amount of salt. I always try to follow the directions for a new recipe but I realized too late that there was too much salt. Not wanting to throw out the fresh zest and garlic, I simply added a TB of olive oil as a diluent, as well as a dusting of garlic powder and powdered lemon zest to try to make it come out. It was great!! My family prefers plain food, but we were trying to increase veggies and needed variety. Thanks!

            on the ingredients it says 1/2 lemon; in the directions it says to zest a lemon???

              To use zest from a fruit, you wash the outside of the lemon or orange and then use a greater to grate some of the skin. And that goes into your recipe. It gives it a little bit more Zip-a-Dee-Doo-Dah.

              I think the lemon zest is to be added to the coating mix to kick up the flavor. I actually have been making a similar thing with lemon juice added after cooking as well as fresh grated parmesan cheese.

            So easy so quick. I put the broccoli in first for about 5 minutes then follow up with the asparagus for the remainder of the cooking time. Cones out perfect every time.

                Very good recipe, I didn't have broccolini so I substituted regular broccoli and it worked fine. Great side dish look forward to having it again.

                                    I have never tasted asparagus in my life because of the place I grew up on. But this recipe, it was unexpectedly delicious! I was impressed how this turned out so very good!

                                      I didn't care for the brocolini. it was a little bitter compared to broccoli. Just ok. I ate it and saved the leftovers.

                                        I felt the same way. If I knew it was so bitter I wouldn’t have added the lemon. Asparagus was good though
