It may not be traditional, but everybody loves a good vodka sauce. Vodka sauce is really a red tomato sauce that has been thickened with cream. It was only just a few decades ago vodka sauce entered the restaurant scene, but it goes with just about anything. Plus, vodka sauce is perfect for a Keto diet. If you want to keep your carbs minimal, skip the pasta entirely! Pour this Keto pasta sauce over any low-carb vegetables to add fat to your meal and to make it all go down easy. Make a larger batch of the recipe, and can the sauce in jars to use year-round! Don’t pull out any top-shelf liquor here. You can use the cheap stuff and save yourself the extra cash.
Is Vodka Keto?
Vodka is typically made from grain-rye. However, despite its origins, vodka is entirely Keto-friendly. In fact, all plain liquor is Keto-friendly. Can I Actually Taste Vodka In The Sauce?
How long you cook your sauce will determine how much vodka you can taste. It takes about 2-3 minutes of cooking for vodka to begin evaporating. It’s unlikely you’ll be able to cook ALL of the vodka out, so expect a mild taste of vodka in your creamy, tomato-based sauce. Depending on your preferences, you can reduce or increase the amount of vodka you use without affecting your macros at all.

Step 1
Heat the olive oil in a saucepan or just a wide, rimmed pan over low heat. Add minced garlic and minced sundried tomatoes to the oil and stir the ingredients around until you hear the garlic start to sizzle in the pan. Next, stir the tomato paste into the pan. Break the tomato paste up until it starts to soften and coat the garlic and sundried tomatoes.Step 2
Turn the heat up a little and pour vodka into the sauce. Stir the ingredients as the alcohol cooks off, and adjust the heat as necessary so you don’t burn any of the other ingredients. Cook the vodka for 1 or 2 minutes like this, then pour in the heavy cream. Season the sauce with salt, onion powder, crushed red pepper flakes, and fresh chopped basil.Step 3
Bring the sauce to a simmer. Once it’s simmering, transfer a couple of spoonfuls of sauce to a small dish. Stir xanthan gum into the dish to create a slurry, then return the mixture to the main pot of sauce. Reduce the heat, stir the ingredients, and allow the sauce to bubble until it reduces. Once you have a thickened vodka sauce, allow it to cool off of the stove before serving. Allow the sauce to cool completely before storing any leftovers in your refrigerator.
