Keto Snap Pea and Radish Salad

I love a quick and easy Keto salad that looks fancy simply because of the ingredients used and how the vegetables are cut. The snap peas are used fresh and cut on a bias. The radishes are sliced on a mandolin into very thin slices. The vegetables are tossed together with a little olive oil, lemon juice, and kosher salt. The salad is best eaten immediately after tossing or after marinating in the fridge for a couple of hours if you like your vegetables softer. This is a wonderful gluten-free and dairy-free salad.

Do I have to use the entire lemon half?

No, feel free to add as much lemon juice as you like from the half lemon. You may not need it all based on your personal preference.

How do I cut the peas on a bias?

Turn the peas at an angle as well as your chef’s knife. The goal is to turn the snap pea and the knife in a direction that will give you the longest strips. Then make thin slices down the length of the pea.

    Slice the snap peas on a diagonal to give the thinnest and longest strips possible. Place them into a medium-sized mixing bowl. Slice the radishes into very thin slices on a mandolin. My favorite mandolin to use is a Japanese-style one as the blade is extra sharp.

    Toss the salad with the remaining ingredients. Taste adding more lemon juice, salt, or olive oil as you desire. Serve immediately for an extra crunchy salad or let it marinate in the fridge for extra flavor.
