  • Step 1

    Heat the olive oil in a skillet over a low/medium heat. Add the beef and cook until browned all over.

    Add the tomato purée, coriander, salt and pepper. Stir well to combine and cook for a minute more until cooked through.

    Preheat the oven to 380 degrees Fahrenheit.

    Divide the cooked beef evenly between the centers of the peppers.

    Transfer to a shallow oven tray and bake for 8-10 minutes until hot through and the peppers are soft and slightly charred.

      can you explain why? too little beef? too many carbs?
