Step 1
Heat a large pan over medium-high heat. Lightly grease with some olive oil or cooking spray and add the beef. Cook for 8-10 minutes, stirring occasionally. Add the taco seasoning and stir well. Continue to cook for another 1-2 minutes. Remove from the heat and drain the beef. Set it aside.Step 2
Crack the eggs into a bowl. Pour in the heavy cream and mix well. Optionally, season with some salt or black pepper.Step 3
Preheat the oven to 180°C (355°F). Shred the cheese. Add the beef to the bottom of a round pan. Add half of the shredded cheese.Step 4
Pour in the egg mixture and top with the remaining cheese. Bake for 30 minutes or until golden brown on top. Remove from the oven and let it sit for 5-10 minutes before slicing.Step 5

I'd like to make this with shredded chicken breast rather than ground beef but am having a hard time calculating the resulting values of calories, fat, net carbs. Has anyone already tried this? TY

Look up Walmart rotisserie chicken in the foods list. It will give you the breakdown of the chicken. You can also look up the eggs, heavy cream and cheese in that same list.

This was very good. I didn’t have Gouda so I used pepper jack & cheddar mixed. Also added quite a bit of cilantro to hamburger & egg mixtures with sprinkling on top. Texture of egg mixture a bit like cornmeal like a tamale pie.

I made this today and liked it. Very good flavor. Topped it with a tablespoon of fresh salsa to up the carbs a little. I'm not sure why medium eggs were used (most recipes call for large) but I used 6 large eggs and it was fine but may skew the nutrition values. Costco has a nice block of gouda cheese. Regular gouda is very mild compared to smoked or aged gouda. Pepper Jack cheese should work well too - I'll try that next time. I will make this again.

I have made this recipe and used a Mexican cheese blend. I found another taco bake recipe that uses cheddar cheese. I would think it is your preference
