Ingredients

  • Bacon, Pork

  • Cheddar Cheese

    Cheddar Cheese

    3 tablespoon, grated

  • Zucchini

    Zucchini

  • Olive Oil

  • Step 1

    Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden on both sides. Set aside.

    Slice the ends from the zucchini and discard. Slice the zucchini in half lengthwise then slice a thin layer off each of the outer edges so that you have a roughly two half inch thick slices. Add to the pan with the bacon fat and cook for a minute or two on both sides until just tender.

    Preheat a broiler to medium. Sprinkle the grated cheese over the zucchini slices and broil until melted and golden.

    Top with the cooked bacon to serve.

    I skipped the olive oil and adjusted the macros. I didn't need the broiler because the cheese melted enough just by covering the pan once the zucchini was cooked. I really enjoyed the flavors and will make this again.

      I really wanted to like this but not possible. The texture of the zucchini was horrible the taste of the cheese and bacon could help this.

        Bit greasy with amount of olive oil but will have again as something different for breakfast but next time reduce the olive oil.
