    1 tsp, leaves

  • Lemon Juice Raw

  • Step 1

    Heat the olive oil in a large pan over a medium heat and add the onion and minced garlic. Fry gently until softened, about 2 minutes.

    Add the oregano, lemon juice, zest and the tomato puree to the pan. Reduce the heat and stir to combine.

    Add the cream cheese to the pan and increase the heat to medium.

    Season generously and stir to combine until the cheese has melted and you have a thick sauce.

    In the meantime, add the zucchini to a large saucepan and drizzle with a little olive oil. Turn the heat to medium low and cover, cook gently for 3- minutes until starting to soften.

    Once the zucchini begins to soften, add the spinach and stir through until just wilted, this will only take about a minute.

    Add the prawns and basil leaves to the pasta sauce and simmer gently for a further 2-3 minutes until the prawns are cooked through.

    Drain the zucchini completely and serve with the sauce. Scatter with extra fresh basil.

    Made this for dinner tonight and it’s a hit. I live alone so having easy delicious meals, so that I stay away from fast food, is important. This is in my favorites and will be made again. I only used a pinch of salt cooking the shrimp. I also used a food processor to slice the zucchini since I don’t have a spiralizer. I really didn’t measure so maybe I didn’t use as much lemon as called for. At least I know that I don’t need that much.

      Found it bland. I think I will add more salt and garlic next time and maybe skip the lemon altogether. Will try it again.

        Was delicious!! I too made a couple changes, I used keto noodles w 0 carbs I get at Metro. Aside from the texture, they are very good. I used heavy whipping cream to make it more saucey, and it was awesome. I found the lemon was perfect, nice little zest to it.

          Overall delicious, but next time I will decrease the lemon juice and increase the garlic. Not sure where the carb count comes from, nor what the portion size means. I just figured it out myself, using the ingredients.

              I used herbs de Provence since I did not have oregano. I also used 1 tablespoon frozen tomato paste, which worked great. A really delicious different recipe that the whole family loved.

                  I made this tonight. It was delicious and will make it again!! I did have to add water as it was very thick, other than that it was delicious!!

                  I was concerned when preparing the sauce that there wouldn't be enough the zoodles, but, boy, was I wrong. The flavors were terrific. I salted the zoodles because they were a little bland but the whole thing came out wonderfully. Loved it.

                      I loved this! Instead of zucchini noodles, I bought a Costco brand of healthy noodles made of fiber and is only 1 g of net carb per serving and this recipe was so tasty

                        I don't shop Costco but in place of zucchini noodles I love "pasta" made from hearts of palm. One brand is Palmini. Walmart sells another brand but I don't remember the name. Hearts of palm has a strong, off-putting odor but if you rinse it well in a colander under running water the odor goes away. Did I mention that I love this "pasta"?

                      I was happily surprised that I really liked this. Generally, zucchini noodles I barely tolerate. The only change I made was to use fire roasted diced tomatoes and added a little bit of water to sauce. One of my favorite dishes.

                        I made this for one ,I just bought a spiral first time I'v had zucchini so made less. I used 1/2 onion ,1 garlic ,1 tsp mascarpone 3 baby plum tomatoes de seeded. I used medium cooked prawns (Forgot to add oregano and lemon juice) Salt pepper I put 2 leaves of basal in the zucchini fried it a tea spoon of olive oil and a tea spoon of butter . It was really yummy I will definitely make this again x 5 🌟

                          It was very delicious! Like others have commented, it needed to be thinned with water, broth or cream. It was very rich and filling. Someone had suggested using salsa, which I did because I didn’t have tomato purée.

                            So delicious!!! The added water was perfect. I used tomato paste instead of a purée and I added mushrooms. I made Penne for the family and zucchini noodles for me. Everyone loved it!! I Will use this sauce for other dishes.

                              The serving size measurements are really confusing me. It says it makes 3 bowls. I measured out the zucchini evenly between the 3 bowls and the same for the shrimp sauce/mixture... but each bowl weights about 10oz each... ?

                              So so soooo good!!! I do agree though. I had to add some water to the cream cheese mixture to keep it from burning. I love this dish. Filling and delicious.

                                This was good, but be sure to add water to the skillet when melting the cream cheese (about half a cup) otherwise, it will burn to the bottom of the skillet before it melts.

                                  This is really good! I didn’t have any lemons, so I left them out, and it was still great!
