Keto Asian Chicken Lettuce Wraps
These Keto Asian lettuce wraps are bursting with bold flavors, and they are an excellent lunch or dinner option for the entire family! This easy recipe takes about 30 minutes to prepare, and with just 5g of net carbs per serving, it's among our favorite Asian-inspired Keto recipes. The recipe yields 6 servings, but you can easily adjust it to feed more or less people. One green chili is added to the recipe to enhance the flavor of this fantastic recipe, but you can adjust the amount of chili or omit it altogether. Serve the prepared wraps with finely chopped peanuts or some fresh cilantro. Enjoy!
What kind of meat can I use?
We used ground chicken for this recipe. If you can't find ground chicken in your local store, add chicken breasts to a food processor and process until it resembles ground chicken. You can also use ground turkey, beef, or pork (you will need to adjust the cooking time accordingly). You can also use thinly sliced pieces of chicken or turkey breasts.
How to make this recipe vegan-friendly?
For a vegan-friendly version of this recipe, substitute the meat with some crumbled tofu. The results will be equally delicious!
What kind of mushrooms can I use?
Any type of your preferred mushrooms would work perfectly here. We used thinly sliced button mushrooms, but shiitake or oyster mushrooms are also an excellent option.

Step 1
Heat one tablespoon of sesame oil over medium heat in a large frying pan. Add the ground chicken and cook for about 5 minutes or until it starts to brown. Peel and finely chop the onion. Add to the pan and mix well. Cook for another 2-3 minutes.Step 2
Finely chop the red bell pepper. Finely chop the green chili. Slice the mushrooms. Add the peppers and mushrooms to the pan and stir well. Continue to cook for 12-15 minutes over medium heat. Stir occasionally.Step 3
Meanwhile, prepare the sauce. Peel and finely grate the fresh ginger. If your peanut butter is firm, you will need to microwave it for about 30-60 seconds to melt it. In a small bowl, whisk together the soy sauce, hoisin sauce, one tablespoon of sesame oil, rice vinegar, peanut butter, sweetener, garlic powder, and grated fresh ginger.Step 4
Pour the mixture into the frying pan with the meat and reduce the heat to low. Stir well. Cook for about 2-3 minutes or until the meat and veggies are well coated with the sauce.Step 5
Serve in lettuce leaves. Optionally, sprinkle with some finely chopped peanuts and cilantro. Enjoy!

Overall very good. No alludes, so I use ehrterythritol, about 2/3 tablespoon which was a little sweet. Needs some crunch… too bad water chestnuts are kinda high

Just a thought — mixing in some small chunks of raw chayote squash at the end might help with some crunch. The chayote is totally edible including the seed in the middle & not to bad on carbs. 😎
