If you still want to grill/fry your cheese, you can use other high-melt cheeses like paneer, queso para frier, or tofu if you’re vegan. Otherwise, feel free to replace the halloumi with mozzarella, cheddar, feta, or any other cheese you prefer.

Step 1
Place the eggs in a small saucepan and cover with tap water. Place the saucepan over medium heat and bring to a boil. Drop the heat to low and cook the eggs for 10 minutes.Step 2
Run the eggs under cold water and peel them. Slice them in half lengthwise, and scoop the yolks into a bowl. Place the whites onto a serving plate.Step 3
Cut the avocado in half, remove the seed, scoop out the flesh, and place half the avocado into the bowl with the yolks. Add the lemon juice, and season with salt and pepper. Mash all the ingredients together until nice and creamy. Taste and adjust seasoning if needed.Step 4
Add the oil to a nonstick pan and place it over medium heat. Slice the halloumi into 4 equal squares. Fry the halloumi squares for 1 minute per side until crispy and golden.Step 5
To assemble, divide the avocado mixture into the bottom egg halves. Top with the fried halloumi. Tear the lettuce into 4 pieces and add them over the halloumi pieces.Step 6
Cover with the second egg halves. Secure all the sliders with toothpicks or skewers. Serve immediately.

Can you specify what types of oil to use? I automatically use olive oil. Yuck!

The filling a bit bland. I even added beef. Not my favourite way to eat eggs
