Keto Cha Soba

Cha soba noodles are a traditional Japanese dish popular for their green color and refreshing accompaniments. These noodles are dipped in a savory dipping sauce and complemented by ginger, scallions, nori, and other Asian ingredients. This Keto cha soba is prepared using zucchini noodles, infused in matcha, and paired with traditional Japanese ingredients for a full experience.

What is Cha soba?

Soba is Japanese noodles made from buckwheat. Cha refers to green tea, or matcha, thus cha soba is green tea-infused noodles. It is considered a delicacy and is only consumed on special occasions. This noodle dish can be served hot or cold along with other accompaniments. This Keto version replaces the wheat noodles with cold zucchini noodles and is tossed in some matcha paste to infuse the green tea flavor. We kept the zoodles raw, but you can steam or blanch them for hot noodles.

How is this Japanese dish eaten?

How this dish is eaten depends on whether it's served cold or hot. Cold cha soba is more common and is usually boiled, strained, chilled, then served on a plate. The accompaniments are usually served on the side. Pick up a chunk of noodles with your chopsticks and dip the lower third in the sauce. Slurp the noodles instead of biting. Slurping is customary in Japan and shows how much you enjoy your noodles. Then, pick up your desired topping and eat them while the noodles are still in your mouth. If consumed hot, then the noodles will be served in a broth with the accompaniments. You can eat them the way you eat any noodle bowl.

What other accompaniments can you serve with this Keto cha soba dish?

For this recipe, we use nori, fresh ginger, scallions, wasabi paste, and sesame seeds as accompaniments. However, just like many Keto Japanese recipes, you can customize this dish to your liking. All cold soba noodles are served with a dipping sauce, which you can prepare or buy from a Japanese grocery store. For more authentic accompaniments, you can serve this dish with tenkasu, shichimi togarashi, and myoga (Japanese ginger).

    To a saucepan, add the soy sauce, mirin, ½ cup water, and erythritol. Simmer for 5 minutes . Remove from heat and transfer to a deep dipping bowl.

    To a medium-sized bowl, add the matcha, 1 tbsp water, and sesame oil. Whisk until combined. Spiralize the zucchini and add it to the bowl and toss to combine.

    Cut the nori sheet into thin strips and place it in a small bowl. Finely slice the ginger and chop the scallions and place them in separate small bowls. Prepare a portion of sesame seeds and a portion of wasabi paste on individual small plates.

    Place the matcha-infused zoodles on a plate and top with some sesame seeds and shredded nori. Place all the accompaniments next to the bowl. Serve immediately!
