It is made with simple low-carb ingredients that all Keto go-ers usually have on hand. The ingredients are mixed directly into a mug and “baked” in the microwave. The result? A quick-to-make, fluffy vanilla birthday cake studded with sprinkles. A quick Keto icing is whipped up and spread on top, then decorated with more sprinkles.

    If you want to keep the mug looking as clean as possible, prep the batter in a small bowl and transfer it to a cup later on. If that doesn’t matter to you, go ahead and mix the ingredients directly into a 12 oz coffee mug. Melt the butter in the microwave for 25-30 seconds.

    Add in the almond flour, egg, baking powder, extract, and monk fruit blend and mix well. Then add in ½ of the sprinkles and fold them in.

    If using a bowl to mix, pour the batter into the coffee mug. Top the batter with the remaining sprinkles. You do not need to grease the coffee mug as the batter has enough fat.

    Heat the cake in the microwave on high for 1 min 28 seconds or until cooked through. All microwaves behave a little differently, so you will need to adjust the time by adding more time if necessary.

    In a small bowl, combine the frosting ingredients, which is 2 tbsp of the powdered monk fruit blend and the almond milk. Mix to combine. It should be a thicker icing. By this point, the cake should have cooled slightly. Now, run a knife around the outside edges of the cake. Turn the cake upside down and frost with the icing. Add additional sprinkles on top as desired. Enjoy!

    I liked this recipe. I added a teaspoon of cake batter extract, only used 2 tablespoons of munk fruit blend (honestly will probably use even less next time), and did not need frosting! If you normally like the chocolate mug cake but are not in the mood for chocolate, give this a try!

      The icing did not come out the greatest and my cake had a slightly eggy and an overwhelming vanilla taste, but I used real vanilla and that can sometimes concentrate over time. It’s one I mag try again with better ingredient control, or use less vanilla as mine was VERY strong smelling when I opened it.
