Low Carb Breakfast Pinwheel Sandwiches

Craving a greasy breakfast sandwich? Let’s make a Keto version with this breakfast pinwheel sandwiches recipe! Instead of a sandwich with a bun, your sandwich is made into tortilla pinwheels. This recipe uses store-bought Keto tortillas, but you can also use one of Carb Manager’s homemade tortilla recipes if you want. The pinwheels are filled with scrambled eggs, crispy bacon, cheddar cheese, and a special sauce; just like what you’d get in a breakfast sandwich from a drive-thru. Make the recipe for breakfast to enjoy by yourself, or make multiple Keto pinwheel sandwiches for meal prepping or snacking.

Other ingredients to use

Think of a classic drive-thru style breakfast sandwich. What’s your favorite protein to have inside: bacon, ham, sausage, or maybe even grilled steak? Cook your favorite type, just make sure you don’t fill your Keto tortilla so much that it tears. If you’re Vegetarian, make your Keto pinwheel sandwiches with just cheese and egg. Then, you can add shredded lettuce or tomato. The special sauce will pair nicely with these ingredients!

What types of tortillas are Keto?

If you’d like to find store-bought Keto tortillas, look for brands that advertise ‘Keto’ or ‘Low Carb’ on the packaging. Then, check the nutrition label. Most Keto tortillas should have between 4 grams and 6 grams of net carbs per serving. Some Keto tortillas will be gluten-free, but not all are. If you have any other special dietary needs, you’ll need to look at the ingredients as well.

Tips for scrambled eggs

Want perfectly fluffy scrambled eggs that don’t dry out in your pan? Whisk a small amount of heavy cream into the raw eggs before you add any seasonings or other ingredients. Cook scrambled eggs in just a little bit of melted butter, olive oil, or coconut oil. Stir them continuously while they cook for even pieces.

    Choose either a store-bought or homemade tortilla and lay it on a flat surface. Add mayonnaise and ketchup to the center of the tortilla, and use the back of a spoon to mix the condiments together. Spread the special sauce across the tortilla. Then, lay slices of cheese over the sauce.

    In a small mixing bowl, whisk together the egg, heavy cream, salt and pepper. Melt butter in a non-stick skillet over medium heat, then pour the whisked egg mixture into the pan. Stir the eggs as they cook in the butter until they scramble. Set the scrambled eggs aside to cool for just a minute or two.

    In a clean skillet, cook slices of bacon until they’re crispy. Arrange the scrambled eggs in a strip along one side of your tortilla. Then, lay the strips of bacon next to the eggs. Gently roll the tortilla over the eggs and bacon, then continue rolling up the tortilla as tightly as you can without tearing it.

    Slice any messy ends of the tortilla off. Then, cut the rolled tortilla into 4-6 pieces. Serve warm or eat as a chilled snack. You can also refrigerate and eat leftovers.
