Ingredients

    Combine all the ingredients except the zucchini and sesame seeds in a small pot. Bring the ingredients to a simmer while whisking to form a smooth peanut sauce. Cook until any excess liquid evaporates, leaving a thickened peanut sauce - about 17g per serving. Set this aside to cool and thicken.

    Spiralize your zucchini. For this recipe, it is recommended you do not cook the zucchini but leave it fresh instead. However, at your discretion, you can quickly toss the zoodles in hot oil just long enough to soften the texture to al dente.

    Serve the peanut sauce drizzled over the zoodles or toss the zoodles in the warm sauce before topping with sesame seeds.

    Delicious! I used fish sauce instead of soy sauce, added a splash of lime juice and some grilled diced chicken! 🤩
