Keto Air Fryer Arancini Balls

These Keto Arancini Balls are made by sauteeing cauliflower rice in a mixture of garlic and diced onions. The 'rice' is then combined with parmesan cheese and shredded mozzarella to hold everything together and make it extra flavorful. A Keto breadcrumb is made using a dough made from almond flour and eggs, rolled thin, and baked until golden brown. Once baked, the cracker-like dough is blitzed in a food processor to make golden breadcrumbs. The arancini balls are rolled in this breadcrumb and then baked in an air fryer until golden and crispy. They are perfect for freezing and reheating later for a quick and easy treat.

Do I need to use an air fryer?

No, if you do not have an air fryer or if you would prefer to, you can bake these in a 375 F (190 C) oven until golden brown.

Why did my arancini balls flatten after cooking?

Due to this recipe's Keto and gluten-free nature, the balls will flatten slightly during the baking process. Be sure to keep a close eye on them and ensure they do not overcook.

Can I use store-bought breadcrumbs?

We have not found a premade breadcrumb that we believe is Keto friendly (and gluten-free). So this is why we have made our own in this recipe.

    Preheat a medium-sized saute pan over medium-high heat until hot. Add in the avocado oil and swirl the pan. Add in the minced garlic and diced onions. Saute for a couple of minutes until the onions are translucent.

    Add the cauliflower rice and saute on medium-low heat until most of the water evaporates from the cauliflower rice. You will want to make sure the cauliflower rice is hot for the next step.

    Place the hot cauliflower rice mixture in a mixing bowl. Add in the cheeses and stir well until the cheese melts into the rice. Add in the egg yolk and mix well. Place the bowl in the fridge overnight to chill.

    Scoop the cauliflower rice mixture using a 1 oz cookie scoop. Press the mixture firmly into the scoop to form it. Use the level to release the mixture from the scoop, then gently roll it into a ball shape. Place the formed balls on a plate and chill them in the freezer while preparing the breadcrumbs.

    To make the breadcrumbs, combine the almond flour, Italian seasoning, sea salt, and eggs in a bowl. It will be a very stiff dough. Place the dough onto a silicone mat and place another silicone mat on top of it.

    If you don't have a silicone mat, you can use parchment paper to do this step. Use a rolling pin to roll the dough out as thin as possible. Bake the dough for 15-20 minutes in a 350 F (180 C) oven. Add more time if the dough is not browned all the way through.

    Next, break up the cracker and place it in the bowl of a food processor. Depending on the size of your processor, you may need to divide the dough into two parts. Next, process the cracker until it resembles breadcrumbs.

    Remove the arancini balls from the freezer. They should be firm but slightly sticky at this point so the breadcrumbs can stick to them. Roll the balls into the breadcrumbs. Then place the balls into the basket of an air fryer.

    Cook the balls in the air fryer at 375 F (190 C) for 6-7 minutes until hot. Do not overcook, or they will melt! Serve immediately with marinara sauce.

    Sounds interesting. I'm not really a fan of cauliflower, but this sound like it might be good. Perhaps I could use pork rinds for breadcrumbs?
