Step 1
Cut the meat into 1 ½ - inch cubes. Roughly chop the pepper. Finely chop the parsley. In a large bowl, combine the meat, bell pepper, one tablespoon of olive oil, chili sauce, two tablespoons of parsley, garlic powder, and salt. Mix all well and refrigerate for 30 minutes.Step 2
Preheat the oven to 400°F (200°C). Line a baking pan with parchment paper. Thread the meat and pepper onto 4 skewers and place on the prepared baking pan. Bake for 20-25 minutes or until fully cooked through.Step 3
Meanwhile, cut the broccoli into small florets. Set a large pot of water over high heat. When it reaches a boil, add the broccoli florets and cook for 8-10 minutes. Remove from the heat and drain.Step 4
Add the cooked broccoli to a food processor. Add the remaining garlic powder and the remaining olive oil. Season with some salt to taste and puree until completely smooth. Optionally, add one tablespoon of heavy cream.Step 5
Now, prepare the avocado salsa. Peel and finely chop the avocado. Finely chop the chili pepper and the remaining parsley. Add the avocado, parsley, chili pepper, and lime juice to a bowl. Season with some salt to taste and mix well to combine.Step 6
Remove the skewers from the oven and transfer them to serving plates. Serve with broccoli puree and avocado salsa. Optionally, drizzle with some more lime juice and garnish with parsley.
