Easy Keto Penne Pasta
This easy Keto penne pasta is a fantastic alternative to traditional pasta recipes. Low-carb zucchinis are sliced into penne pasta shapes and then cooked in a wonderful tomato sauce. Feel free to adjust the herbs and spices according to your taste (we suggest using fresh herbs or adding a small amount of red pepper flakes). We also added a small amount of sweetener to the recipe, which is essential to neutralize the bitterness of tomatoes and give you a perfect balance of flavors to enjoy. We served this amazing Keto pasta with shredded mozzarella, but you can also add some freshly grated parmesan and a drizzle of olive oil. Enjoy!

Strained Tomatoes

Step 1
Rinse and pat dry the zucchini. Cut the ends of the zucchini and then cut into quarters, lengthwise. Cut each piece to create shapes that resemble penne pasta. Set it aside.Step 2
Pour the strained tomatoes into a large pan. Add the tomato paste, dried basil, thyme, garlic powder, oregano, salt, and erythritol. Stir well to combine and cook for 15 minutes over medium heat.Step 3
Add the prepared penne and pour in the wine. Add the butter and mix well. Continue to cook for another 10-12 minutes. Taste and optionally season with more salt or pepper.Step 4
Shred the mozzarella cheese. Remove the penne from the heat. Transfer to serving plates and top with mozzarella. Serve immediately.
