AIP Banana Coconut Parfait
Indulge your sweet tooth in this creamy parfait topped with a crispy coconut crumb. This dessert is the ultimate AIP version of a banana cream pie, but the components are layered in small cups. The recipe is prepared using AIP-compliant ingredients, resulting in a decadent dessert that will have you hooked.
What does AIP stand for?
AIP stands for the autoimmune protocol, an elimination diet that aims to determine food allergies and sensitivities in those suffering from autoimmunity. This diet is based on the Paleo diet and removes all potentially problematic foods, including grains, dairy, eggs, legumes, beans, nuts, seeds, nightshades, processed foods, and foods with chemicals and additives. AIP recipes aim to improve nutrient deficiencies in those with autoimmune diseases, balance their gut flora, and help heal their bodies.
How to make the banana cream component of this dessert?
Add the coconut milk, ripe banana, arrowroot flour, maple syrup, and a pinch of salt to a blender and blend until smooth. Transfer the mixture to a saucepan and place it over medium-high heat. Keep whisking until the mixture reaches a boil. Drop the heat to medium-low and let simmer until thick, stirring occasionally. At this stage, you can serve it as banana pudding or carry on with the recipe to make the parfaits.
Can you omit the crumb from this recipe?
The crumb is an essential component in parfaits, adding texture and a toasty flavor. If you omit it, you’ll have a banana pudding, which is fine if that’s what you prefer. AIP desserts are meant to be customizable to your own desires.
Can you prepare this parfait ahead of time?
In fact, it is better to prepare this parfait a few hours before serving it. Refrigerating it intensifies the flavors and improves the texture. This parfait is best eaten within a day but lasts 3-4 days in your fridge.
