Low Carb Breakfast Pinwheels

In a pinch for breakfast or need a quick snack? These Keto sausage pinwheels are made with cream cheese, scrambled eggs, and breakfast sausage links. There’s room to get creative or add more ingredients to your pinwheels too! If you want more protein, add 1-2 strips of cooked bacon to the pinwheels, or melt cheddar or your favorite cheese in the scrambled eggs. For breakfast, you could even add a drizzle of sugar-free maple syrup to the pinwheels before you roll them up! All the ingredients go inside a Keto or Low Carb tortilla, then they’re rolled up and sliced into bite-sized pieces.

Are tortillas Keto?

There are some tortillas that can be eaten on a Keto diet and some that can not. Standard flour or corn tortillas have too many carbs and can’t be used on a Keto diet. If you’re not making your own homemade Keto tortillas, you can purchase specialty tortillas at some grocery stores. They’ll be labeled as ‘Keto’ or ‘Low Carb’.

Where can I get Keto tortillas?

Many grocery stores now sell tortillas and other products geared toward the Keto diet. If you can’t find tortillas in a store, you can make your own at home! Breakfast sausage substitution

If you don’t want to use processed breakfast sausage or frozen sausage, you can make a substitution. Grab raw ground pork sausage instead, and cook it in a non-stick pan before adding it to your pinwheels. You can substitute the direct weight of the frozen breakfast sausage listed in the ingredients.

    Crack and whisk an egg in a mixing bowl, then whisk in the heavy cream and pinches of salt and pepper. Melt the butter in a small pan on your stove over medium-low heat. Pour in the egg mixture and slowly stir the eggs as they cook. Cook and stir the eggs until they’re scrambled.

    Choose a Low Carb or Keto tortilla that is either from a store or your own homemade tortilla. You can briefly warm the tortilla to make it more pliable. Spread cream cheese across the tortilla, leaving a little space around the edges so it doesn’t squeeze out the ends later. Arrange the scrambled eggs in a row along one edge of the tortilla.

    Make breakfast sausage from frozen by following the directions on the packaging in your desired method. The quickest way may be to microwave the links until they’re hot. Line the whole sausage links (don’t cut them) in a line along the scrambled eggs.

    Roll the tortilla over the sausage and eggs then up into a tight roll. Use a sharp knife to remove the ends of the tortilla if necessary. Cut the tortilla into 4-6 pieces (like a sushi roll) to make pinwheels. Enjoy warm for breakfast or as a snack!
