This rich keto take on cauliflower cheese uses cream cheese, oozy mozzarella, tangy parmesan, sweet onion and salty pancetta.

This makes a great side to roasted meats, perfect for Sunday lunch.

Made this for dinner with neighbors. Cut broth in half, based on comments. I used thick bacon lardons instead of pancetta. It was delicious and will definitely make it again.

Very yummy. Made as a side for Thanksgiving. Replaced pancetta with bacon and used chicken broth instead of vegetable broth.

I added a tad of arrow root, some ground mustard and a splash of worchestshire sauce! So yummy!

Delish... reduced the recipe to two portions and when I got hungry later, I ate the second portion! The only thing I would add is that the sauce does not thicken with cheese alone, it’s quite watery, so maybe a tsp of arrowroot powder may thicken it.
