  • Step 1

    Follow the directions on your package of shirataki noodles to prepare them. You will need to drain and rinse them first. You may need to boil them for a few minutes as well to tenderize the noodles. Add the prepared shirataki noodles to a glass 7x11 baking dish. Cut up the hot dogs into bite-sized pieces and stir them into the noodles to disperse them.

    Turn on your oven to preheat to 350 F (180 C). Meanwhile, make the cheese sauce on the stove by adding heavy cream and butter to a pot. Heat the ingredients until the butter melts and the cream reaches a simmer. Whisk mozzarella cheese, cheddar cheese, and salt into the pot until the cheese melts.

    Pour the warm cheese sauce over the noodles and hot dogs in the glass dish. Fold the cheese sauce over with a spoon until all the cheese, noodles, and hot dogs are combined and coated. Spread the mixture in an even layer in the dish, then sprinkle the final amount of cheddar cheese over the top of the casserole.

    Cover the casserole with aluminum foil and place it in your oven. Bake the casserole for 15 minutes first. Then, remove the foil and bake for an additional 10 minutes or until the casserole is done. For doneness, the cheese on top will be melted and the edges of the casserole will be golden. Divide the casserole into portions for serving.

    Loved it but there was to much sauce. Likely would have been better if I used the same shape of noodles but I could only find spaghetti.
