Crème anglaise is just a fancy word for custard sauce. This Keto dessert cream is rich, flavorful, and compliments the crepes beautifully. It is quick and easy to prepare, using only 4 ingredients. You can use this crème anglaise in many other recipes, so it might be worth preparing a double batch.
How to get super thin Keto crepes?
The batter consistency plays a huge role in the thickness of these crepes. This recipe yields the perfect viscosity if followed correctly. Also, allowing the batter to spread properly in the skillet is essential. Grease a crepe skillet and place it over low heat for 20-30 seconds. Then, pour the batter and swirl until it reaches the edges. You don’t want the pan to be too hot. Otherwise, the batter will set quickly, preventing the batter from reaching the edges.
How to serve these low-carb crepes?
There are 2 ways to serve crepes: Fill them and roll them, or fold them twice into a quarter circle and add the toppings over them. We opted for the latter and finished them off with fresh strawberries.
What other toppings can you add to these Keto crepes?

Ingredients
Heavy Whipping Cream
0.5 cup
Vanilla extract
1 tsp
Powdered Erythritol (Icing Sugar)
3 tbsp
Raw egg, yolk
2 large
Coconut flour
0.25 cup
Melted Butter
1 tbsp
Almond Milk (Unsweetened)
0.5 cup

Recipe Steps

Step 1
Add the heavy cream and 1 tsp vanilla to a saucepan over medium heat. Whisk until it reaches a low simmer. Take the saucepan off the heat.Step 2
In a bowl, whisk together the yolks and 1 tbsp powdered erythritol. Pour the heavy cream with one hand into the bowl while whisking into the other. This method is called tempering the eggs to prevent them from cooking.Step 3
Return the mixture to the saucepan and place over medium heat. Keep whisking until the custard thickens and coats the back of a spoon. Set aside and start preparing the crepes.Step 4
To a bowl, add the melted butter, sour cream, almond milk, eggs, and ½ tsp vanilla. Whisk until smooth. Whisk in the coconut flour and 2 tbsp erythritol.Step 5
Allow the batter to rest for 10 minutes. This will also help make the batter thin and smooth. Lightly grease a crepe pan and place it over medium heat.Step 6
When it’s warm, add ¼ cup of the crepe mixture and swirl in circular motions to cover the entire surface of the pan with the batter, to make a thin crepe layer. Cook for 1-2 minutes. Flip and cook for 30 seconds.Step 7
Repeat until you have 4 crepes. To serve, fold a crepe twice and place it on a plate. Drizzle 2 tbsp of crème anglaise and top with strawberries.

These are AMAZING!!! Just what I needed. Added an extra egg and I was able to flip them, roll them, stuff them! Worth a try. I found the trick is to let it cook real good..(but not burn- Low and slow on a HOT cast iron pan)..on the one side then they won’t fall apart on you when you go to flip them. Hope that helps!

Excellent 👌 Very easy. Takes a bit of prep. I added 2tsp (slightly heaped) of Oat Fever. And added the extra egg white to the batter. Turned out beaut💚

tastes good but the crepes fall apart when you try to flip them

try cooking longer over a lower heat. Top should be mostly dry with some browning around the edges before you flip

Same happened to me. I made them with almond flour cause I ran out of coconut. Was thinking that was the problem. Could have been part. I think next time I have to make the batter in advance. Will try again.
