So we have designed a delicious easy Keto breakfast bar recipe made with unsweetened coconut flakes, almond butter, sliced almonds, and dark chocolate chips. You will love these double-chocolate breakfast bars! They are one of the best ways to add more healthy fats to your Keto or low-carb diet in a convenient grab-and-go form. These bars are packed with healthy fats to help you fill up with good calories throughout the day. You can also incorporate these after a high-protein meal when you want to add more fats to your macros. These would be a great treat to use during a muscle gain phase as they are nutrient and energy dense but do not take up much room in your stomach!

How to make Keto breakfast bars

Keto breakfast bars are easy to make. The mixture of sliced almonds and finely unsweetened coconut flakes are combined into one bowl. They are bound together with egg whites which not only hold the mixture together but also add protein to the bars. The mixture is then pressed into an 8"x8" baking pan so all the ingredients compact together. This step is critical for the success of this recipe since it contains no gluten or sugars as a binder!

What are the best chocolate chips to use?

The best chocolate chips to use for this recipe are stevia-sweetened chocolate chips, which you can find at most large grocery stores.

How do you get these bars to hold together?

To get these gluten-free bars to stick together, the mixture is pressed down firmly with a piece of parchment paper laid on top of the mixture. The mixture is pressed down with the palms of your hands to compact the ingredients together. The mixture of coconut oil, almond butter, and monk fruit liquifies in the oven and coats the other ingredients. Once the mixture cools down, it solidifies. The bars must be chilled in the refrigerator before cutting into bars.

Is granola Keto?

Granola is not Keto traditionally! However, you can make granola Keto by replacing oatmeal with unsweetened coconut flakes and nuts like sliced almonds.

  • Step 1

    Preheat the oven to 350 F. Line an 8x8" pan with parchment paper so that the paper hangs off the sides a bit. This will give you some leverage when pulling the bars out of the pan later on. In a medium-sized mixing bowl, combine the sliced almonds, unsweetened coconut flakes, cocoa powder, and pure monk fruit powder. Stir well to combine.

    To the same bowl, add the almond butter, melted coconut oil, and large egg whites. Stir well to combine. The mixture will be thick with a thin coating of the liquid ingredients around the nuts and coconut flakes. Be sure to use finely shredded coconut flakes for this recipe so they will compact together.

    Pour the mixture into an 8"x8" baking pan. Press the mixture down firmly with a spatula.

    This step is critical to the success of this recipe! Take a small piece of parchment paper, place it on top, and use your hand to continue to press the mixture down firmly to compact all the ingredients. Top the mixture evenly with the chocolate chips, and gently press them into the mixture with the palm of your hand.

    Bake for 20 mins or until the granola bars are lightly golden brown on top. The bars will be loose when they are hot from the oven and bubbling. Allow them to cool completely, then transfer them to the fridge for 1 hour before cutting them into bars.

    Cut into 8 bars. Keep bars stored in the fridge until ready to eat. Enjoy! These are great for a grab-and-go breakfast paired with a protein shake or other Keto protein items.
