Step 1
Dice the chicken into 2cm / ¾-inch cubes and add to a large bowl. Mince the garlic and squeeze the lemon to extract 2 tablespoons of juice. Add the lemon juice, garlic, olive oil and oregano to the bowl.Step 2
Thoroughly combine all the ingredients together. Leave to marinate for a minimum of 30 minutes to 1 hour, preferably overnight.Step 3
Preheat the oven to 180C/350F. If using wooden skewers, make sure to soak them in water for 30 minutes, this will prevent them from burning. Otherwise, use metal skewers. Evenly thread the chicken pieces on the skewers and place on an oiled baking tray.Step 4
Cook on the top level of the oven for 12-15 minutes, or until cooked through.Step 5
Transfer to a serving dish. Quarter some lemons for serving.
