There will be many versions of a Greek salad, but this is an authentic Keto summer Greek recipe for a 'Horiatiki' Village Greek salad and the only recipe you will ever need! When picking your produce for this Keto summer Greek salad, ensure your tomatoes are ripe and juicy, as this is what adds to the flavor. Choose good quality extra virgin olive oil, preferably of Greek origin, and Greek feta cheese and olives. This salad serves 3-4 people as a main or 4-6 people as a side dish.
Is all Feta the same? The number #1 rule when buying Feta is to make sure it is made in Greece and only contains ewe/sheep’s milk (and sometimes goat’s milk), rennet and salt. It should not contain anything else nor should it contain cow’s milk. Greek feta should have a salty tangy flavor. If you cannot find authentic Greek feta, you can use another salty white cheese of your liking.
Can I adapt this recipe to other diets? Make this recipe vegan by substituting feta cheese for a plant-based alternative, or omit it completely.

Tomato raw (includes cherry, grape, roma)

Green bell peppers, raw
1 medium - 2 1/2" diameter x 2 3/4"
Onion, white, yellow or red, raw

Cucumber, raw, with peel

Greek Olives, Pitted

Olive oil

Red wine vinegar

Feta cheese

Oregano, dried

Step 1
Roughly chop the tomatoes. Dice the pepper and cucumber into rounds. Finely dice the red onion. Add them to a large bowl. Add the extra virgin olive oil, red wine vinegar, salt, and oregano. Top with feta cheese and olives.Step 2
When ready to serve, break the feta into pieces and mix well. You can also leave the feta whole for presentation. Enjoy!
