You will love this Keto spaghetti bolognese sauce made from whole food ingredients. The sauce is made by simmering onion, celery, and carrots in butter and olive oil. To the sauteed vegetable mixture, ground beef is added and browned. Doing so provides all the meaty flavors to all parts of the sauce. Then, whole milk is added and simmered down until the beef is dry. The same process is repeated with white wine. Next, plenty of Italian plum tomatoes are added, to which everything is simmered for several hours to allow all the flavors to meld. The sauce is wonderful served immediately, or it can be frozen into individual containers for meal prepping.

The best beef to use is grass-fed beef. Even though it may contain less fat than grain-fed beef, there is a lot more omega-3 fatty acids and CLA. While grain-fed beef is still very nutritious, it does tend to be higher in pesticides from grains. You can alternate grain-fed and grass-fed beef in your meal planning.
How long does this sauce take to cook?
The entire process, from starting the vegetables to simmering the whole milk, white wine, and tomatoes takes about 4 hours. The cook time on this sauce is long, but the results are worth it! Even though it is cooking, the sauce will be over a low heat, so you can easily do other tasks in the kitchen while you wait for it to cook.

Step 1
In a medium-sized saucepot, add the olive oil and the butter. Turn on the heat to low and allow them to melt. Add in the finely diced onion, celery, and carrot. Sprinkle the mixture with ¼ tsp kosher salt. Stir the mixture over low heat until the vegetables are translucent.Step 2
Next, add in the ground beef. Break up the meat using a spoon, and allow it to cook over medium heat until the beef is no longer pink. Sprinkle the beef with 1 tsp kosher salt and ¼ tsp black pepper. Once the beef is no longer pink, add in the whole milk. Give the mixture a stir. Bring the mixture to a simmer and watch until it simmers at a decent pace but not too fast. Stir occasionally until the milk has completely evaporated.Step 3
Repeat these same steps for the milk, but add white wine. Simmer until all the wine has evaporated and the beef appears dry.Step 4
Then, add in the plum tomatoes and break them up with a spoon. Bring the mixture to a simmer again. Place the lid on and allow to simmer for 4 hours.Step 5
Check the sauce periodically, adding water as needed. Be sure to taste the sauce at the end, as the salt will concentrate as it cooks. Taste at the end of the cooking time and adjust as necessary. Serve immediately!
