Step 1
Preheat an oven to 350 F. Combine the almond flour, psyllium husk, kosher salt, and baking powder in the bowl of a stand mixer. Beat well to combine.Step 2
Add in the boiling water as well as the apple cider vinegar. Mix well to combine, about 1 minute. The mixture will be very stiff and sticky.Step 3
Next, add in the raw eggs. Beat very well to combine, about 2-3 minutes. Doing so will ensure that the psyllium husk powder thoroughly hydrates and stiffens. Scrape down the sides of the bowl using a rubber spatula or plastic bench scraper.Step 4
Using a large cookie scoop, divide the dough into five equal parts. Place them on a silicone mat-lined baking sheet or a parchment-lined baking sheet. Wet your hands and roll each dough portion into a ball. Repeat by wetting your hands in between each one.Step 5
Make the egg wash mixture by combining the egg yolk, water, and kosher salt. Mix well. Then brush the mixture on top of each of the buns. Sprinkle on the everything bagel seasoning.Step 6
Bake for at least 60 minutes or until the buns are golden brown, light, and hollowing sounding when tapped. Make sure they are baked all the way through. If they begin to collapse when exiting the oven, place them back into the oven for another 20 minutes or so. Allow them to cool before serving as they will continue to firm.
