Step 1
Cut the onion in half, thinly slice each half, and separate the strips from each other. Add the almond flour, parmesan, coconut flour, salt, black pepper, garlic powder, and cayenne pepper to a food processor. Process until fine, then transfer to a plate.Step 2
Crack the eggs into a bowl and beat well. In batches, dip some of the sliced onions into the eggs and then the crumb. Coat each onion slice well and transfer to a plate.Step 3
Repeat with the remaining onion slices, dipping them in the egg, then coating them with the crumb. Add 3 tbsp of oil to a skillet and place over medium-low heat.Step 4
Fry half the coated onions until golden and crispy for 5-8 minutes, gently stirring every minute or two to prevent burning. Transfer to a plate lined with paper towels. Wipe the skillet clean and add the remaining oil.Step 5
Fry the second batch of coated onions, as you did previously. Transfer the onion fries to a plate. Garnish with chopped parsley and serve immediately.
