Keto Easy Ham and Cheese Pinwheels
If you’re new to the Keto diet, don’t make meal or snack time complicated! Make these easy Keto ham and cheese pinwheels for chilled meal prep or as a finger food at snack time. All you need is a vegetable peeler, but there’s no cooking required. Instead of chopping cucumber, you’ll peel the cucumber into strips. These cucumber strips will be the foundation of your pinwheels! This way, you’re not adding extra carbs like you would with a tortilla. Just add ham and cheddar cheese before you roll the cucumber up and slice it into pinwheels!
Other ingredients to use
Of course, you don’t have to stick to just ham and cheese pinwheels! You can substitute the ham with deli slices of turkey, chicken, roast beef, or another favorite protein. Instead of cheddar, play around with slices of mozzarella, provolone, muenster, swiss, pepper jack, or another favorite sliceable cheese. You can add other ingredients to the pinwheels too like lettuce, bacon, pickled veggies, or tomato.

One serving makes enough pinwheels for a filling lunch, especially if you pair this recipe with a side dish or other high-fat recipe, such as a fat bomb. Cucumber

Deli ham
4 large slice - 6 1/4" x 4" x 1/16" - each 1 ounce
Cheddar cheese
4 slice (from pre-sliced package) - each 3/4 ounce

Step 1
Use a vegetable peeler to peel long strips from a whole cucumber. The strips need to equal the weight listed in your ingredients. Lay the strips flat over a piece of paper towel, arranging them so they slightly overlap each other, as pictured. Create about an 8-inch long rectangle with the strips of cucumber.Step 2
Press another paper towel over the cucumbers to help absorb some of the excess moisture. Lay slices of ham and cheddar cheese across the cucumber. You will likely need to make multiple layers of ham and possibly cheese too.Step 3
Gently fold one end of the cucumber slices over the ham and cheese, then keep rolling the cucumber up into a tight roll. Use a clean, sharp knife to slice through the cucumber and cut the roll into 6-8 pieces. Enjoy chilled.
